Vietnamese legend has it that one of the Vietnamese Kings of the Mai Dynasty once offered lychee fruits, which were regarded as precious fruit of Viet Nam, to the Emperor of China. It's unlikely that ice cream was offered with it but 1300 years later it's a favourite combination that we just have to have on our menu.
